Make a fiesta @ your cocina with this receta ๐Ÿ˜‹

Longing for a colorful, delicious, feliz Mexican fiesta? We found a very easy way to get there, and it’s cheaper than you’d think ๐Ÿ˜œ.

Ok, before we set too high expectations: we are talking about una receta here. But it’s a very good one because it doesn’t only taste great, it’s also easy, healthy, looks wonderful and… it has a taste of Mexico. Ready to make a fiesta @ tu cocina? Aquรญ vamos!

Preparation: 10 minutes

Oven time: 45 minutes

Ingredients:

For: 4 persons.

  • 750 g pumpkin, in slices of 1 cm
  • 4 corn cobs
  • 1 tin of black beans (400 g), rinsed and drained
  • 1 teaspoon chipotle chilli flakes
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 200 g feta cheese, crumbled
  • 25 g fresh coriander, finely chopped
  • 2 spring onions, in rings
  • 4 heaped tablespoons sour cream
  • Rice

Preparation

1. Preheat the oven to 200 ยฐC.

2. In a roasting pan, mix the pumpkin, corn and black beans with the spices, salt and olive oil. Put in the oven for 45 minutes.

3. Squeeze the lime over the top and sprinkle with the feta, coriander and spring onions. Serve with sour cream and rice.
